    With Jon having just returned from Ukraine, and me about to head off to Austria, we decided that some spicy food was in order. Although the Tandoori Chicken was a bit of a flop, the menu overall worked really well. We had good variety, got a lot of lunches, and had the perfect amount leftover for an easy Friday dinner.

    2014 Food Lover's Cleanse: Week 2 (New American Theme)

    As a follow-on to Week 1 of the Bon Appetit Food Lover's Cleanse, we did a New American-focused menu. Again, we really only incorporated a few of the cleanse recipes, but those we did were really delicious this week! Also, by the end of these two weeks, I have taken off the ~4 pounds of holiday weight I had gained. Hooray!

    2014 Food Lover's Cleanse: Week 1 (Asian Theme)

    So, I definitely felt the pounds go on this holiday season. In an effort to get those off quickly, and jump start our healthy eating for the year, we incorporated some meals from the Bon Appetit Food Lover's Cleanse into our meal plan for the week. We by no means went all-in. Breakfast and lunch remained largely unchanged, and I did fudge some of the recipes to make them more delicious. All in all, it was okay. None of the recipes were really winners, though I recorded many of them because they are healthy.

    Sun: Lemongrass Chicken with Coconut Black Rice and Garlicky Bok Choy
    Mon: Soy-braised Short Ribs (admittedly not part of the cleanse diet) with more of the delicious Bok Choy
    Tues: Avocado and Grapefruit Salad with Edamame (with fried won ton wrappers added for crunch) with Sesame Miso Vinaigrette
    Wed: Cheat and go out to Bluejacket (but we ate healthy, I swear…)
    Thus: Chicken, Mango, and Black Rice Salad
    Fri: Sushi at home

    We experiment a bit with our xmas dinners - while the Thanksgiving menu is well locked-in with the annual turkey and dressing with sides, we don't feel as bound to repeating that for xmas. Last year, we tried goose, but ... well, let's say we didn't instantly adopt it as a tradition. This year, we're going with duck confit:

    4-day Cabin Plan

    Jon and I have found a great rental "cabin" about 1.5 hours outside of DC (not giving our secret away!). We go there about once or twice a year to unplug and relax. We invariably have a great time.

    Each time we go, we plan a menu and bring everything we need to execute it. To help with future planning, here are menu options and shopping lists.

    Summer Option

    Lunch D1 (optional): Stop at Ashby Inn, Goodstone Inn, or Trummer's On Main.

    The Georgian

    In DC, we are at the peak weeks for stone fruit. Peaches, nectarines, apricots, plums. If it's a drupe, it's in season. For those of us with generally laughable growing seasons, this is pretty exciting. So, well, we might have gone a bit overboard in buying the past few weeks. We bought Marvin out of apricots the first week he had them to make jam for the winter, and keep ending up with, well, more peaches and nectarines than most sane people would try to tackle in a week.

    We came to the realization that if we want to preserve treats from this summer for the winter, then we need space to do that. We've done pretty well on our house-canned goods, but lacking a Freezer of Unusual Size (I don't think they exist), this meant we had to find uses for some items stored away in there currently.

    OK, this winter thing is getting a bit old. This was eat-down-the-freezer week, 'cuz once fresh food is available again, it won't be a high priority.

    Saturday: We team-cooked with Joe and Erin on a quest for a tasty, fancy pescetarian mean. We ended up with Jose Andres' Tuna Stew with an olive oil and egg yolk foam.

    In which we bring out the big guns to defeat the last few months of winter vegetables.

    Better Late than never: Where to Eat in Argentina

    We came, we saw, we had steak.

    We arrived in Buenos Aires early in the morning. After taxi'ing in to the city, we were overjoyed to find our room at Miravida Soho, a small boutique hotel in Palermo, ready for us to take a nap in. We re-emerged around lunchtime and explored downtown - the obelisk, the congress buidling and the Casa Rosada. We retreated back on an Orange-line-at-rush-hour-plus packed subte (The subte system is great - just don't take it with the flow at rush hour!). We chilled at the hotel, talked to its new owner, had some excellent wine (Los Cobos' Felino line) and sought out some recommendations for our first dinner in Bs As. We were recommended to Don Julio, which largely flies under the radar of the tour books, is a bit kitschy, but remains the best steak, along with the best service we had in Argentina - which is no easy feat, especially in combination.

    The rest of our time in BsAs would be cold and rainy, but we managed to explore the cute and hip shops of Palermo, the trendy and arty Retiro, the city-like Recoleta Cemetary, the botanical and Japanese gardens during a break in the rain, the crazy San Telmo sunday markey... and - mostly - eat.

    Buenos Aires is a foodie town. From the humble and heart-clogging choripan (mild, fatty chorizo sausage, split, grilled, and slapped in a bun with chimichurri and other sauces) to a five hour molecular-gastronomy-inspired lunch (ok, really only four and a half hours), BsAs has you covered.

    We started the week with some oysters from BlackSalt, and then dived in to a full asian-inspired week.

    Sunday was roll-your-own sushi, and we got playful with some fried wonton wrappers and seaweed salads from BlackSalt

    Monday was steam buns using some leftover ham from the previous week, and steam buns frozen after making waaay more than we could eat in this recipe

    Sunday was glazed ham, using an overly complex glazing recipe which I'd not revisit. The addition of cardamom and other spices was intriguing, but over the top in the end.

    Monday was gourmet mac-and-cheese, abusing the "cheese ends" bin from the grocery to great effect.

    We had various combinations of leftovers and winter veggies (brussel sprouts, kale, etc.) the rest of the week.

    We're really tired of winter veggies.

    Sunday started us off with Braised Lamb Shank

    Monday got us making all our various Mediterranean dips, and so Monday was dip night - tzatziki, drinker's choice, and hummus

    Wednesday was shrimp saganaki

    Thus we had brick chicken with salad and dips and grapeleaves.

    Friday we went out the the Columbia Room and Coco Sala.

    After getting back from a fantastic, super-long weekend away for the wedding of some close friends in Mexico, we wanted to keep the ball rolling with a week of Mexican-inspired dishes.

    Recent Kitchen Experimentation

    On a whim, I bought a bunch of rhubarb at the farmer's market this weekend, figuring I could find a tasty recipe for it. I found a rustic rhubarb tart recipe at http://smittenkitchen.com/2010/05/rustic-rhubarb-tarts/ -- I made a few edits to their recipe, though. In the pastry, I used one whole egg instead of two yolks, and a flour mixture of 1 cup cornmeal and 1 1/2 cups flour. I didn't have any cream, so I just used 2% milk instead. In the compote, I added dash each of cinnamon, allspice, ginger, and a 1/2 oz of dark rum.

    Bottled today in preparation for the worst that the DC summer can throw at us - a wheat beer with tons of lemon and spice (cardamom, allspice, cinnamon, nutmeg and a dash of ginger).

    The Sping Bock turned out OK - nothing mindbending, but a good solid beer.

    My late spring brew for the 2010 was a simple bock ("Spring Bock") It ended up pretty strong, so I also nicknamed it Jumpgoat. It's a pun. Look a the label. It is decent, and tastes like a good, cask-conditioned bock. Which is good, but nothing terribly exciting.

    Next up: a spiced lemon wheat beer for mid/late summer.

    The first beer of 2010 was an Irish style Red Ale dubbed "Equinox" for its balance. It was strong without being heavy and hoppy without being too bitter. Unfortunately, it's tapped out now.

    From Imitation to Authentic and Back Again: The Maraschino Cherry

    We came into possession of a few pounds of fresh sour cherries (Hey, so, we went a bit overboard at the U-pick, OK? Audrey's currently canning 16 pounds of strawberry jam).

    I've been googling about for ideas, and came across the concept (which I've latched on to) of creating homemade, HFC and Red-5 -free maraschino cherries. Authentic ones, as sour cherries and marasca (get it? marasca => maraschino?) cherries are not too disilimar. No, not the "authentic" ones like from the stores, or as described in ye olde southern housewife's bible of preserving, the Ball Blue Book.

    What we currently think of as authentic Maraschino cherries is defined by a post-prohibition editing of history as "cherries which have been dyed red, impregnated with sugar and packed in a sugar sirup [sic] flavored with oil of bitter almonds or a similar flavor" (-- FDA.gov).

    Compare that to the description of the 1912 USDA guidelines for the same: "Food Inspection Decision 141, issued in 1912 under the Food and Drugs Act of 1906, stated that "maraschino cherries" should be applied only to marasca cherries preserved in maraschino. This decision further described maraschino as a liqueur or cordial prepared by process of fermentation and distillation from the marasca cherry, a small variety of the European wild cherry indigenous to the Dalmatian Mountains."

    That's downright D.O.C. And further; "Products prepared from cherries of the Royal Anne type, artificially colored and flavored and put up in flavored sugar sirup might be labeled "Imitation Maraschino Cherries" or, if there was no reference to "Maraschino," might be labeled to show that they are preserved cherries, artificially colored and flavored.""

    The lowly imitation maraschino cherry is now the real deal, and we somehow lost the liqueur qualities at the same time.

    Fresh Chickpeas - Another Delicious Sign of Spring

    Jon and I first had fresh roasted chickpeas about a month ago when spring first appeared in DC. At the suggestion of our waiter at Zaytinya, we ordered this dish which neither of us had had before. And it was delicious!!!

    Today, for the first time ever, I saw fresh chickpeas for sale at Safeway (of all places), and so we got some and tried to replicate that delicious dish. The result</a href> was delicious.

    Closing out Winter, Welcoming Spring

    Last night, we had some friends over, serving our Pumpkin Raviolli using up the last of our pumpkin puree with an awesome beet-blood orange-fig chevre salad, fresh bread courtesy of the guests, and good wine and conversation courtesy of all involved. For dessert, I finally attempted my grandmother's strawberry shortcake, whipped-egg-risen cakes and all. It turned out well, but still a bit eggy (I used farm fresh eggs).

    We ended the night with some creative Manhattans, and all was good.

    Tonight, we continued on the celebrate-spring trajectory with a seared steelhead filet (with parsely, chives, lemon zest and a dusting of garlic and sage powder) served alongside some fiddle-head ferns which I blanched then sauteed with already-carmelizing onions and mushrooms in bacon fat. To both dishes, a dash of white wine was added.

    In other words, I'm very happy it's spring. We've begun haunting the various nearby farmer's markets for any sign of garlic tails.

    Brisket Success

    I spotted some Stubbs' Moppin' Sauce in the Austin airport on the way back from SXSW. It was handily past the screening point, and I snagged it; having been unable to source it in DC as yet.

    We finally got around to smoking up a brisket; and between increased patience, a smaller hunk of meat, and a better setup inside the grill itself, it all worked out. We got a great red crust around the outside and tender but juicy inside.

    Last week was New Orleans week ... not my favorite week. The food is growing on me (and last week's gumbo was pretty delicious), but its still more of a "Jon-week." So this week was an "Audrey-week." I'll call it "California ethnic." I focused on four of my favorite California ethnic cuisines - Iranian, Jewish (...sort of a cuisine), Asian (broadly), and Mexican (also broadly).

    Greek Week (Feb 7)

    This past week was a greek and mediterranean foods week. We had our favorite [[Brick Chicken]], a new lamb dish based on this roasted, stuffed lamb concept, but using the leftover grape/port reduction from this recipe, which has been taking up valuable freezer space. Regardless, the lamb didn't turn out all that exciting.

    Indian food week (Feb 1)

    We have a few core Indian dishes we've learned how to make pretty well; but they're not quite enough to fill a week. Each time we settle on an Indian food week, we try a new dish, with ... well, mixed results.

    The new recipe this week was Mughal style lamb (stew) on saffron rice. We substituted fresh saffron pasta from Eastern Market for the rice. It was OK, but not really a "keeper" .

    Our menu for the week revolved around using those ingredients - naturally a pizza (Jon usually prefers to make his own dough, but that's time consuming and very messy), a shrimp scampi with the linguini, sauteed mushrooms, and creative leftover-ing.

    This week we received our third Arganica delivery (apologies for forgetting to take a picture and post about our second delivery, which included locally milled flour).

    Our First Arganica Delivery

    Today we received our first delivery from Arganica, a DC-based local farm foods delivery business. Basically its a cross between a farmer's market and a CSA (Community Supported Agriculture) farmshare. They carry a broad list of produce, breads, cheeses, and prepared foods from a variety of local farms. They send you a list of products and prices on Monday, you choose exactly what you want to order, and they deliver it to your door on Thursday evening.

    What Shall We Do with a Green Tomater?

    So it's snowing here in DC. Though it seems to do this every year, it remains a surprise to DC residents ... every year, causing panic on the level I associate with Texans who deal with this whole freezing precipitation problem less reliably.

    My tomato plants didn't really get the memo about summer being over, so remain(ed) laden with tons of green tomatoes (and blossoms...). I tore them up this morning as the snow was getting started and now have a rather large pile of green 'maters to deal with. I'm already ripening some in newspaper wrappings in a closed off bag.

    The Secret to Good Salads

    After a long and careful study of what makes a good salad, I have decided upon three key components, in addition to your standard greens and veggies:

    1. Something sweet (like dried cranberries, raisins, pomegranate seeds, chopped apples, etc.)
    2. Something crunchy (like croutons, crushed pita chips, tortilla chips, nuts, etc.)
    3. Cheese (depending on the salad, goat cheese, feta, and parmesan are all good choices)

    Of course you must use these things in moderation to avoid overdoing it and adding too much fat/calories/etc to a dish that, essentially, is supposed to be a healthy addition to your meal.

    This week was Indian week. We had a bottle of pre-made "Korma" sauce to use up. As it turns out, paneer is very difficult to find in DC. Yes (the organic market near our house) used to carry it, as (I think) did Harris Teeter. No such luck this time. Had to make a special trip to Whole Foods, only to pay $9 (!) for a box of paneer.

    Last night we participated in the 5th annual Capitol Hill [[http://aliteraryfeast.org/|Literary Feast]]. We prioritized four books/cuisines and were delighted to be assigned to the Unaccustomed Earth dinner. The book is a collection of short stores, all about first generation Bengali-Americans and their struggles to blend their parents' Indian heritage with their American upbringing. Its an outstanding book, especially for anyone whose family has recently emigrated to America (from anywhere, not just India).

    This week we took advantage of the first fall crops to have a harvest-focused menu. We had thought ahead a little and bought some of the staples we'd need at Harris Teeter the week before. So we had no need to go to Safeway, and bought everything for the week at Eastern Market.

We wanted to take advantage of the fall bounty suddenly available at Eastern Market, and so we spent most of our day preparing a tasty Italian-inspired fall harvest dinner (yes we began at 10 am by roasting said harvest vegetables...).

    End of Summer Brew: Boysenberry Wheat Ale

    Brewed a wheat ale with boysenberries for my end-of-summer brew. It started out tasting pretty wretched after the first 2 weeks of bottle-aging, but another week in and it's showing some good flavors, and less yeasty. I'm hopeful it will continue to mellow out in the next 2-3 weeks.

    Also, I brewed an Octoberfest-style bock with a 1/2 cup of coffee and some brown sugar in the wort -- it'll be at least a month before that concoction is drinkable, but I have high hopes.

    Florida Ave (Capital City) Market

    We'd always talked about going to the massive Florida Ave Market (Actually the Capital City Market), but had always been overwhelmed by its size, complexity (think more crazy market than supermarket or even yuppie-filled farmers market). As part of Cultural Tourism DC's WalkingTown free walking tours this weekend, we found our solution.

    Richard Layman, urban planner and activist, gave us a heartwarming, depressing, informative, and mouth-watering tour of the market area. It began as an offshoot of the freight unloading area that used to occupy the space around what is now the New York Ave metro stop, just north of Union Station. It remains
    a popular wholesale outlet with limited direct retail storefronts; catering to a wide variety of international tastes for jaw-droppingly low prices. Richard's blog at http://capitalcitymarket.blogspot.com/ covers much more about the market, and follows the ongoing attempts to "redevelop" it (that's code for getting rid of it in most cases).

    Bottled this weekend was the previously-mentioned Pilz. The West Coast Pale Ale was a resounding success; one of the cleaner, most balanced (sweet, light, hoppy) beers I've made in a while.

    To be fair, I try to brew stuff that's not available in stores, like Pumpkin porter (a repeat favorite, coming in late October), and Coffee Bock (a new recipe for my annual Octoberfest bock).

    You beer history lesson is that Pilz is the result of repeated failure with standard ale-style brewing in Pilsen, Bohemia. Fed up with their traditional technique, they (purportedly) smuggled yeast from a Bavarian monastery and hired Josef Groll to bring bottom-fermented beer to Pilsen. Combining that style with locally available Saaz noble hops and you get Pilsner, which was first served on 11 November 1842. In gratitude of Groll's contributions to the beer world he was then fired.

    I should be bottling the Pilz as soon as I have enough empties from the Kolsch to fit it.

    More Gardening

    IMG_3502So, this year I had three seedlings (Better Boys) all thrive (and by thrive, I mean, not die). I bought three tomato plants (one better boy, a brandywine, and one other varietal) from the farmer's market which had the benefit of a better upbringing and are already beginning to fruit.

    Beer Brewing: Kolsch

    Kolsch The first brew of the season was a leftover from fall, a relatively dark Vienna Lager. I added some extra honey to sweeten it up a bit. It turned out as an excellent beer for a crisp autumn day, but was drinkable in the early spring as well.

    Carbonating and conditioning right now is Kolsch, an ale that masquerades as a lager, native to Cologne. It has a mild aroma of dried banana (seriously), and took quite a while to get ready for bottling, so I'm hopeful for a complex taste.

    Gardening, take 1

    SeedlingsI planted seeds for the garden this year. It'll be a scaled-back version of the 2 previous years of gardens, as I lack the huge yard of the NutHouse. I intend to grow 2 varieties (or more) of tomatoes, cucumber, and a mix of hot peppers, as well as some herbs (basil, chives, and mint). I might try sunchokes from the some shriveled roots from last year just to see if they come up.

    This week we're focusing on using up food and supplies we already have instead of being spendy (last week's fresh seafood-laden N'awlins menu ended up on the expensive side).

    But we're resourceful, so we won't be eating poorly this week.

    Our plan for next week is all south of the border - Nicaraguan Gallo Pinto with pollo asado, enchiladas (half suizas style, half Lauriol Plaza-esque seafood enchiladas), gallo pinto leftovers (with fried cheese), and pupusas.

    The theme this week was "Mediterranean coast" - so we had southern French, Italian, and Middle-Eastern dishes.

    Monday - Gnocci in a cream truffle sauce. When I finalize the recipe for this, I'll post it. It's heart-stopping in at least two ways.

    Tuesday - Spiced, braised (in beer) lamb sausage with hummus

    Wednesday - mediterranean dip night with hummus, spicy hummus, tzatziki, and muhummara with pita.

    Thus and Friday - Manicotti topped with fresh pesto

    Inauguration Week Menu

    We celebrated Inauguration Week with Hawaiian and Chicago foods. Yes, we were too wimpy to try to make Kenyan.

    Sat - Hawaiian ceviche - Poke, Peruvian-style ceviche, and Poisson Cru

    In order to maximize what we can buy locally, we shop on Saturday morning for as much of our food for the week as is reasonable, at the neighborhood farmer's (-ish) market. To make that work, we try to set up our menu for the week before (sometimes, during) our market run. I'll try to post our menus (with recipes where we have them!)
