Sushi Bake

Who knew we'd been eating sushi wrong all this time? Apparently Filipinos and Hawaiians.

I used this website for guidance and accompanied it with this cucumber salad.

Serves 4.

Approx 2 cups of cooked white (sushi) rice
1 Tbsp mirin or sugar
2 Tbsp rice vinegar, divided
12 oz imitation crab, flake style
1/4 cup mayonnaise plus more
1 Tbsp sriracha
2 scallions, thinly sliced
Furikake seasoning
3 Tbsp unagi sauce
Nori
Avocado

Mix white rice with mirin/sugar and 1 Tbsp of rice vinegar. (If using sugar, dissolve into rice vinegar first.)
Adjust seasoning to taste.

Make crab salad by mixing crab, mayonnaise, sriracha, green onions, and other 1 Tbsp of rice vinegar. Adjust to taste.

In a 9x9 glass baking dish, layer your sushi bake:
- Rice
- Furkiake
- Crab salad
- Unagi sauce
- Drizzle of additional mayo (kewpie if you have it)

Bake at 450 degrees for approximately 10 minutes, or until sizzling.

Serve with nori squares (the seasoned snack ones are nice) for scooping, avocado, and a cucumber salad and sliced avocado to fully replicate the sushi experience.
