Thai Iced Tea

If you've ever been to Thailand (or really, ever eaten in a Thai restaurant), you've had Thai iced tea. And you know it is delicious. And you know it's great with spicy foods... or other foods... or as dessert... or just because.

Bon Appetit now tells us how to make it. I repeat the recipe twice in two different proportions because, frankly, it's dangerous to have 8 servings of Thai iced tea around the house.

For 8 servings:
10 star anise pods
2 tablespoons sugar
1 vanilla bean
15 tea bags
1/2 cup heavy cream
1/2 cup sweetened condensed milk

  • Combine star anise pods, sugar, and 1 cup of water in a small saucepan. Scrape in seeds from vanilla bean. Add bean. Bring to boil, reduce heat, and simmer for 10 minutes.
  • Transfer to large pitcher. Add tea bags and 7 cups cold water. Let steep, chilled, for at least 4 hours.
  • Strain into another large pitcher. Stir in heavy cream and sweetened condensed milk. Enjoy over ice.

For 2 servings
2-3 star anise pods
Dash of vanilla extract
3 tea bags
Approx 1/4 cup sweetened condensed milk

  • Combine star anise pods, sugar, vanilla extract, and 1/4 cup of water in a small saucepan. Bring to boil, reduce heat, and simmer for 10 minutes.
  • Transfer to large jar. Add tea bags and 2 cups cold water. Let steep, chilled, for at least 4 hours.
  • Strain into another large jar. Stir in sweetened condensed milk. Enjoy over ice.
