Peasant Bread

Thick and crusty, relatively easy to make. Bonuses, it has almost no fat (it uses steam to keep it moist, but this means it doesn't last long. It's easy to add creativity to the recipe with herbs and cheese. However, this bread is fucking excellent right out of the oven with soft butter and honey.

Makes 2 loaves

1 pkg dry yeast
2 1/4c warm water
1 tbsp sugar
1.5 tbsp salt
6.5c+ flour

1/2 recipe:
1c warm water
.5 tbsp sugar
.75 tbsp salt
3c flour

Dissolve yeast in warm water, add sugar and salt

Add flour by cups, stirring. Knead in last if necessary, knead for 5-8 minutes on floured surface

Grease inside of a bowl, place dough in bowl, cover with plastic wrap, let double
Punch down, cut into two loaves. Place on cornmeal-covered baking sheet, make X on top of loaves, let sit 5 minutes. Brush with water

Place inside cold oven (turned on to 400) with pan of boiling water on rack below bread.

Bake 45 mins. or until brown. Cool.

Fun additions: knead in spices, add asiago on top when baking. Yum. This bread is fucking excellent right out of the oven with soft butter and honey.
