Mediterranean Style Hummus
Adapted from a blog that apparently isn't public anymore.
Makes 4-5 cups. Can be halved.
1/4 cup fresh lemon juice
1/4 cup tahini (be sure to mix first)
1/4 cup Olive Oil
3-4 cloves garlic
1 can chickpeas (or ~1/2 cup dried chickpeas, soaked and cooked)
1/2 tsp salt
Combine all ingredients in blender until smooth. Add water by the tablespoon if too thick. Expect to use between 1/4 and 1/2 cup of water.
Top with chopped parsley, paprika, and pine nuts.
