Fattoush Salad
The fattoush salad has always been one of my favorite salads. It is a lettuce-less salad and has bread in it -- what's not to like! But fattoush salads are the kind of dish where everyone's grandmother makes it differently. This recipe is the closest I've found to my ideal fattoush salad.
Ingredients
1 whole wheat pita bread
[roughly equal parts cucumber, tomato, red pepper + half-part onion]
1 large English cucumber OR 2 small Persian cucumbers, diced
2 cups cherry tomatoes, halved OR 1 large regular tomato, diced
1/2 red pepper, diced
1/4 of a medium red onion, finely diced
3/4 cup fresh parsley, finely chopped
3/4 cup fresh mint leaves, finely chopped
1 clove of garlic, minced
2 oz feta cheese, crumbled
Olive oil (about 1 Tbsp)
Ground sumac (1 tsp - 1 Tbsp, your choice)
Juice from one lemon
Salt and pepper to taste
Instructions
Lightly mist pita bread with cooking spray, and season with a bit of salt. Toast until crisp and golden brown. Break into bite size pieces.
In a large bowl, toss together all ingredients.
