Stuffed Mushrooms

Stuffed Mushrooms

Audrey's family's stuffed mushrooms. A vegetarian (but not vegan) treat. Always a hit at parties and holiday meals.

Makes approx. 12 mushrooms

Ingredients:

1 lb of large stuffer mushrooms (approx. 1 container)
3/8 c of breadcrumbs
1/4 c of grated parmesan cheese
1/4 c of chopped onions
3/8 c of olive oil
1/2 clove of garlic or 1/4 tsp garlic powder
1/4 tsp of salt
1/4 tsp of pepper
1/4 tsp of oregano
1/4 tsp basil
1/4 tsp of parsley

Directions:

Wash mushrooms well.
Pop out stems.

Scoop out inside of mushrooms with butter knife. Put scoppings in bowl.
Add breadcrumbs, cheese, onions, spices, and half of olive oil. Chop in food processor. Should be a pasty consistency.

Spoon mixture into mushrooms.

Put half of remaining olive oil on bottom of pan.
Place mushrooms in pan.
Drizzle remainder of olive oil on top of mushrooms.

Bake at 350 deg for 25-30 mins.
