Caramelized Onion and Apple Flatbread
Adapted from a recipe we found online, this flatbread or pizza is easy to make and tasty. Cut it into small squares to serve at a party.
1 pizza crust, rolled out thinly
1 large red, 1 large yellow onions, thinly sliced
2 Granny Smith or other tart apples, peeled, cored, and thinly sliced
4 slices of bacon or pancetta, diced (optional)
1 Tbsp balsamic vinegar
4 ounces fontina cheese, shredded
Parmesan cheese (for serving)
Butter or olive oil
1 tablespoon minced fresh thyme leaves
dash of salt
Preheat oven to 375°.
In a large frying pan over medium-high heat, add the oil or butter.
When hot, add onions and salt.
Cook, stirring occasionally, until onions are soft and beginning to brown slightly, about 10 minutes.
Add balsamic vinegar and stir until it evaporates.
Add apples and stir to coat.
Reduce heat to medium and cook, stirring often, until onions are medium brown, about 30-45 minutes.
Note: this can be done ahead of time and refrigerated.
While onions/apples are cooking, cook bacon/pancetta chunks over medium heat until they reach your desired doneness level.
Roll out pizza dough into a rectangle the size of your cookie sheet.
Spread 1-2 Tbsp olive oil on top, to lightly coat.
Place bacon and cooled onion-apple mixture on the pizza crust.
Top with shredded cheese and minced thyme.
Bake until crust is golden, 15 to 20 minutes.
Serve hot with grated parmesan cheese.
